2022 Austin Taco and Margarita Festival

The Taco and Margarita Festival was my introduction back into the kitchen. September 29, 2013, I decided to take a break from cooking to concentrate on family and friends. This was the most exhilarating thing I’ve done in a long time aside from skydiving! I enjoyed perfecting my Smoked Pulled Pork Tacos with Pickled Slaw and Citrus Crema. We even offered a vegetarian option, Black Bean and Street Corn Taco. Friends and family benefited throughout the process by becoming my personal tasters. It took me 3 days and 5 smokers to smoke 440lbs of pork butt for this event. Talking about learning to adjust to this sort of volume. 6,700 people attended the festival and we couldn’t be more pleased with the turn out. I can’t wait for the next opportunity to showcase our ability and expertise cooking for large volume events!
